Last weekend: We spent time in Ottawa with my family and I caught up with old friends over lunch (and introduced the ladies to little Bea!). On Sunday, my mum treated us to a Puffed Peach Pancake (recipe below) for breakfast. Was reminded of this '90s song while I ate :-) #goingtoeatmealotofpeaches

Serve with whipped cream and maple syrup for a real treat!

This weekend: We stayed in Montreal and celebrated Antoine's niece's birthday. On Sunday, I thought I would start a tradition of baking while Bea naps in the morning. That way, we could have a little treat with our afternoon tea (yes, I have introduced her to this ritual ...at least the biscuit part ;-) or for dessert. I decided on apple muffins (recipe below) because those were the ingredients I had on hand.

Enjoy with coffee or tea for elevensies or afternoon tea :)

In both cases, I think the chefs were a little disappointed with the result of their baking. Luckily, in both cases, and as with most baking, the results were only temporary and were happily consumed by those at home.

Puffed Pancake (adapted from Pepperplate)

Serves 4

Ingredients

6 eggs
1 cup milk
1/2 teaspoon salt
2/3 cup flour
3 or four large apples (or peaches, in our case) peeled, cored, and sliced
5 tablespoons butter
1 teaspoon cinnamon
Sprinkle of sugar

Instructions

1. Preheat oven to 415
2. Mix together eggs, milk, flour, and salt. Melt butter in a 12 inch pie pan in the oven. Take pan out of the oven and lay the fruit evenly over the bottom. Return the pan to the oven until the butter sizzles.
3. Remove from the oven and pour the egg mixture over the apples. Sprinkle cinnamon and sugar over the top and return to the oven for 30 minutes. Check the centre to be sure it's done. I often finish it off in the microwave for 2 or 3 minutes if the middle is still a little soupy. Depends on how juicy the fruit are.
4. Cut into wedges and serve with maple syrup.


Apple Muffins (from Muffin Mania)

Yields 8-9 muffins

Ingredients

1/4 cup shortening or margarine
3/4 cup white sugar
1/2 teaspoon vanilla extract
1 egg, beaten
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 1/2 cup apples, peeled, cored, chopped
1 tablespoon cream

Instructions

1. Cream shortening and sugar. Add vanilla and beaten egg.
2. Stir together dry ingredients and add, stirring just to moisten.
3. Add apples and cream gently.
4. Fill greased muffin cups and bake at 350 for 20-25 minutes.

*Note: Batter is very thick and these muffins do not rise high!
